TIMESINDONESIA, JAKARTA – Pepes has become a popular way to cook any ingredients including fish to red meat. Pepes is a way of cooking some ingredients by wrapping it with some banana leaves and sealed it with tooth pick. And this is what happened to pepes ayam kemangi.

Pepes ayam kemangi literally translated as pepes chicken with basil. As any other pepes, the dishes will be wrapped in banana leaves with dozens of ingredients added to top the chicken off. 

All the ingredients will elevate the taste of the chicken and makes you like you want this dish to be served on your table for the rest of your live. So without any further do, let's check the recipe out.

Ingredients:

  • 1 kg chicken (cut it into 4)
  • 2 tbs  lemon juice
  • 1 tsp salt
  • 8 cloves garlic
  • 12 cloves shallot
  • 7 pcs candlenut
  • 8 pcs cayenne chili
  • 5 cm turmeric
  • 6 cm galangal
  • Cooking oil
  • 2 cup basil leaves
  • 2 pcs tomatoes  (diced)
  • 8 pcs bird eye chili (minced)
  • 4 pcs bay leaves
  • 2 lemongrass (diced)
  • 2 leak (minced)
  • 1/2 tsp salt
  • 1 tbs sugar
  • 1 tsp chicken block
  • Banana leaves (adjustable)

Instructions:

  1. Marinate the chicken with lemon juice and salt, pepper. Let it sit for 20-30 minutes.
  2. Ground the galangal, turmeric, candlenut, shallot, cayenne chili, add 1 table spoon of cooking oil.
  3. Sautéed the ground ingredients for a minute or two till you smell the nice fragrant. Adjust the number of the cooking oil if you think it's needed. Turn of the stove.
  4. Once it's ready you could add the sautéed ingredients into the marinated chicken. Add the basils, bird eye chili, sugar, chicken block, bay leaves, tomatoes, lemongrass, leak, and salt. Mix it evenly.
  5. Put the ingredients prepared in banana leaves. Make sure it's well sealed. For the after product will involve some juice from the ingredients wrapped.
  6. Steam you pepes ayam kemangi for at least 20 minutes. Lift it up when its done, wait till it's cool enough and your spicy pepes kemangi will be your favorite way to have your chicken since then. (*)
