Easy Recipe for Ayam Geprek, Smashed Fried Chicken with Super Spicy Sambal
TIMESINDONESIA, JAKARTA – Sambal has been one common companion dish to serve in every Asian food especially in Indonesia. This country has hundreds kind of sambal to serve along their food. Just like when they make Ayam Geprek with it's super spicy sambal (sauce).
Ayam Geprek is merely crispy mashed chicken on top of the spicy sambal. If you follow this recipe then you will be numb and couldnn't feel your tongue and will have sexy lips afterwards. But for the safest, you could tone it down. So, check this recipe out.
• 250 g chicken fillet (boneless thigh)
• 1 egg
• 50 g multipurpose flour
• 50 g of potato flour / corn starch
• 1 tbsp paprika powder / chili powder
• salt and pepper (to taste)
• vegetable oil for deep frying
• 20 pieces bird's eye chillies (cayenne pepper)
• 4 cloves garlic
• 2 tbsp hot vegetable oil
• Monosodium glutamate (MSG)
Preparing the chicken
To make the battered fried chicken, slice the chicken thinly, season with salt and pepper to taste.
Season the corn starch, multipurpose flour with salt, pepper and paprika powder, mix well. In another bowl, season the egg with salt and pepper, beat it.
Dip the chicken into the corn starch, beaten egg and back to the corn starch. Fry until golden brown and cook, you can double fry it to make it crispier.
In a mortar and pestle, coarsely blend cayenne peppers, garlic, and a pinch of salt and MSG.
Heat vegetable oil till it is sizzling slightly. In a sturdy heat-proof dish (or in the mortar) pour the hot cooking oil onto the blended paste. Your sambal is now ready.
