TIMESINDONESIA, JAKARTA – Have you ever try squid ink gravy? People commonly will throw squid ink during the cooking process. Yet, Indonesian loves to cook it together with the squid with loads of chili in it. This dish is so called as Super Spicy Squid with ink gravy.

This dish is very suitable to accompany you during winter or a cold day during autumn. It will make you sweating just in a bite. But for those who can’t tolerate the level of spicy you could adjust it to your level. Here the recipe for you.

Ingredients

·  ½ kg of squid cleaned and very finely sliced, leave the ink

· 1 onion, chopped

· 6 shallots, chopped

· 3 cloves of garlic, chopped

· 7 demonic Indonesian chili, finely chopped

· 5 green chili, chopped

· 1 leek, chopped

· 2 tomatoes, diced

· A little bit of salt, sugar, and freshly ground pepper

· 2 cm galangal

· 2 cm ginger

Instructions

Marinate the squid with lime juice, leave it for 10 minutes. Heat the oil in a frying pan over a high heat. Add all chopped ingredients including squid ink in it, sauté for a minute and then add the tomatoes, ginger and galangal, simmer it for 2 minutes.

Add the salt, sugar and pepper, adjust the taste, bring the squid into the pan. Cook it for 3 minutes. More than 3 minutes your squid will become chewy. And your super spicy squid with ink gravy is ready to serve. (*)
