TIMESINDONESIA, SURABAYA – Chef Roger Tay, the Executive Chef of Lan Hua Restaurant at Mercure Grand Mirama Surabaya serves an exclusive menu, Golden Rivers King.

This menu is one of the most favorite dishes of the emperors at that time. This menu is made of fish.

 “The most favorite menu is Golden Rivers King, which is cooked with Teo Chew style or steamed,” said Chef Roger Tay on Wednesday (20/02/2019).

The main ingredient is Giant Travelley fish or also known as Ikan Kuwe Gerong or Ikan Belitong in Indonesian. The seasonings are sugar, salt, chicken powder, plum, tomato, salted vegetable, shitake mushroom, and tofu slices.

 “It is served fresh from the steamer. It has a sour taste, just like the spicy and sour fish soup in Javanese dish,” said Chef Roger Tay from Lan Hua Restaurant Mercure Grand Mirama. (*)
