The Pudak, A Various, Indigenous Snack from Gresik District

TIMESINDONESIA, GRESIK – Pudak, indigenous snack from Gresik District (usually called Kota Pudak Gresik), East Java, is getting more various. The new type of pudak, which is made of rice flour and sugar, and steamed by using areca nut leaf, has a small size or half size of the common pudak.

One of the mini pudak vendors, Agus Budiono (43) said that the innovation of mini pudak production is caused by the strict competition between pudak vendors.

Due to the strict sales and dozens of shops that sell Pudak in Gresik district, since four years ago, Agus tried to make an innovation by making mini pudak.

For the aroma and the production method, Agus said that the process was just the same as the production of pudak in general.

“There are various flavors, such as original and pandan, but the size is smaller. One pudak in general can be four mini pudak,” said Agus, Thursday (12/7/2018).

Agus then shared a story that he used to think the pudak with big size was not suitable to be served to the guests.

“Initially, the consumers told that pudak was too big, and they were ashamed to eat it,” he added.

Unexpectedly, mini pudak made by Agus is becoming well-known in the society, especially for those who hunt for the typical food of Gresik.

“Initially I made 100 pieces of mini pudak, but now it has multiplied,” he said.

One bunch containing 10 pieces of mini pudak costs IDR 14,000. “Whereas one bunch of big pudak costs IDR 25,000,” asked the man who also expected that his innovation could be people’s favorite.

Meanwhile, one of the buyers, Lilis (42), the residence of Perum GKB, Gresik, said that she preferred mini pudak to big pudak. Her reasons were, besides of the cheap price, mini pudak was suitable to be treat for guests.

“I bought mini pudak, the indigenous snack of Gresik District (usually called Kota Pudak Gresik) as the souvenirs to my family in Sidoarjo. The taste is delicious, and the most important thing is the affordable price that is half price of the pudak in general,” she said. (*)
